Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into cubes
  • 2 Carrots sliced
  • 2 Potatoes diced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Beef Broth
  • 1 tbsp Tomato Paste
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the beef stew meat and cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the tomato paste, salt, pepper, thyme, and rosemary. Cook for another minute.
  • 4. Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
  • 5. Add the sliced carrots and diced potatoes. Continue to simmer for another 30 minutes or until the vegetables are tender.
  • 6. Adjust seasoning if needed. Serve hot.

Notes:

This stew is even better the next day!
