Instructions:
1. In a large pot, heat some oil over medium heat. Add the beef stew meat and cook until browned on all sides.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the tomato paste, salt, pepper, thyme, and rosemary. Cook for another minute.
4. Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
5. Add the sliced carrots and diced potatoes. Continue to simmer for another 30 minutes or until the vegetables are tender.
6. Adjust seasoning if needed. Serve hot.
Notes:
