Instructions:
Heat olive oil in a large pot over medium heat.
Add venison and cook until browned on all sides.
Add chopped onion and garlic, cook until softened.
Pour in beef broth, bring to a boil.
Add celery, carrots, salt, pepper, and thyme.
Reduce heat to low, cover, and simmer for 2 hours.
Check seasoning and adjust if necessary. Serve hot.
Notes:
Feel free to add other low-carb vegetables like zucchini or bell peppers.
