Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the cubed acorn squash, vegetable broth, salt, pepper, and thyme. Bring to a boil.
Reduce heat and simmer for 30 minutes, or until the squash is tender.
Add the chopped kale and cook for another 5 minutes.
Serve hot.
Notes:
Feel free to add other vegetables like carrots or potatoes.
