Ingredients:  

Main Ingredients

  • 2 acorn squash peeled, seeded, and cubed
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme dried
  • 1 cup kale chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the cubed acorn squash, vegetable broth, salt, pepper, and thyme. Bring to a boil.
  • Reduce heat and simmer for 30 minutes, or until the squash is tender.
  • Add the chopped kale and cook for another 5 minutes.
  • Serve hot.

Notes:

Feel free to add other vegetables like carrots or potatoes.
