Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, sauté until fragrant.
3. Add the beef cubes and cook until browned on all sides.
4. Add the lemongrass, fish sauce, soy sauce, and sugar. Stir well.
5. Pour in the beef broth and bring to a boil.
6. Reduce the heat to low, cover, and simmer for about 2 hours, or until the beef is tender.
7. Season with salt and pepper to taste before serving.
Notes:
This stew pairs well with steamed rice or crusty bread.
