Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder cut into chunks
  • 1 tbsp Brown sugar
  • 2 tbsp Vegetable oil
  • 1 large Onion chopped
  • 4 cloves Garlic minced
  • 1 large Tomato chopped
  • 2 cups Water
  • 1 tsp Salt or to taste
  • 1 tsp Black pepper or to taste
  • 2 sprigs Thyme
  • 1 tbsp Soy sauce
  • 1 tbsp Ketchup

Instructions: 

  • 1. Heat oil in a large pot over medium heat. Add brown sugar and let it caramelize.
  • 2. Add pork chunks to the pot and brown on all sides.
  • 3. Add chopped onion, garlic, and tomato. Cook until vegetables are soft.
  • 4. Pour in water, add salt, pepper, thyme, soy sauce, and ketchup. Stir well.
  • 5. Bring to a boil, then reduce heat to low. Cover and simmer for about 1 hour or until pork is tender.
  • 6. Adjust seasoning if needed. Serve hot with rice or bread.

Notes:

This dish is even better the next day as the flavors meld together.
