Ketchup
Instructions:
1. Heat oil in a large pot over medium heat. Add brown sugar and let it caramelize.
2. Add pork chunks to the pot and brown on all sides.
3. Add chopped onion, garlic, and tomato. Cook until vegetables are soft.
4. Pour in water, add salt, pepper, thyme, soy sauce, and ketchup. Stir well.
5. Bring to a boil, then reduce heat to low. Cover and simmer for about 1 hour or until pork is tender.
6. Adjust seasoning if needed. Serve hot with rice or bread.
Notes:
This dish is even better the next day as the flavors meld together.
