Ingredients:  

Main Ingredients

  • 1 whole hare cut into pieces
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 4 cups chicken broth
  • 1 tsp thyme dried
  • 1 tsp rosemary dried
  • to taste salt and pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add hare pieces and brown on all sides. Remove and set aside.
  • 3. In the same pot, add onions and garlic. Cook until softened.
  • 4. Add carrots and potatoes. Cook for a few minutes.
  • 5. Return hare to the pot. Add chicken broth, thyme, and rosemary.
  • 6. Bring to a boil, then reduce heat and simmer for 2 hours.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

For a richer flavor, marinate the hare overnight in red wine and herbs.
