Ingredients:

carrots

potatoes

chicken broth

salt and pepper
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add hare pieces and brown on all sides. Remove and set aside.
3. In the same pot, add onions and garlic. Cook until softened.
4. Add carrots and potatoes. Cook for a few minutes.
5. Return hare to the pot. Add chicken broth, thyme, and rosemary.
6. Bring to a boil, then reduce heat and simmer for 2 hours.
7. Season with salt and pepper to taste. Serve hot.
Notes:
For a richer flavor, marinate the hare overnight in red wine and herbs.
