chorizo, sliced

onion, chopped

Instructions:
Heat olive oil in a large pot over medium heat.
Add chorizo and cook until browned, about 5 minutes.
Add onion and garlic, cook until softened, about 3 minutes.
Stir in diced tomatoes, chicken broth, paprika, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 15 minutes.
Add shrimp and cook until pink and opaque, about 5 minutes.
Garnish with chopped parsley and serve hot.
Notes:
This stew is best served with crusty bread or over rice.
