Ingredients:  

Main Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb chorizo, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp parsley, chopped for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chorizo and cook until browned, about 5 minutes.
  • Add onion and garlic, cook until softened, about 3 minutes.
  • Stir in diced tomatoes, chicken broth, paprika, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 15 minutes.
  • Add shrimp and cook until pink and opaque, about 5 minutes.
  • Garnish with chopped parsley and serve hot.

Notes:

This stew is best served with crusty bread or over rice.
