Instructions:
1. Heat the oil in a large pot over medium heat. Add the chicken pieces and brown on all sides.
2. Add the chopped onion, minced garlic, and thyme. Cook until the onion is soft.
3. Pour in the chicken broth, add the carrots and potatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.
4. In a mixing bowl, combine flour and water to make the dumpling dough. Form small balls and drop them into the stew.
5. Cover the pot and cook for another 20 minutes, or until the dumplings are cooked through. Season with salt and pepper to taste.
