Instructions:
Heat olive oil in a large pot over medium heat.
Add beef and cook until browned on all sides.
Add onions and garlic, cook until softened.
Stir in tomato paste, cook for 2 minutes.
Add beef broth, carrots, potatoes, salt, and pepper. Bring to a boil.
Reduce heat, cover, and simmer for 2 hours or until beef is tender.
Notes:
