Ingredients:  

Main Ingredients

  • 1 lb Beef Chuck cut into cubes
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Onions chopped
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add beef and cook until browned on all sides.
  • Add onions and garlic, cook until softened.
  • Stir in tomato paste, cook for 2 minutes.
  • Add beef broth, carrots, potatoes, salt, and pepper. Bring to a boil.
  • Reduce heat, cover, and simmer for 2 hours or until beef is tender.

Notes:

Serve hot with crusty bread.
