Instructions:
Rinse and soak black-eyed peas overnight.
In a large pot, heat oil over medium heat.
Add onions, garlic, and ginger. Sauté until onions are translucent.
Add tomatoes, bell pepper, and carrot. Cook for 5 minutes.
Stir in curry powder, paprika, and salt.
Add soaked black-eyed peas and water.
Bring to a boil, then reduce heat and simmer for 45 minutes or until peas are tender.
Notes:
Serve hot with rice or chapati.
