Ingredients:  

Main Ingredients

  • 2 cups dried black-eyed peas soaked overnight
  • 1 large onion chopped
  • 2 tomatoes chopped
  • 2 cloves garlic minced
  • 1 inch piece ginger minced
  • 1 green bell pepper chopped
  • 1 carrot chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • to taste salt
  • 4 cups water

Instructions: 

  • Rinse and soak black-eyed peas overnight.
  • In a large pot, heat oil over medium heat.
  • Add onions, garlic, and ginger. Sauté until onions are translucent.
  • Add tomatoes, bell pepper, and carrot. Cook for 5 minutes.
  • Stir in curry powder, paprika, and salt.
  • Add soaked black-eyed peas and water.
  • Bring to a boil, then reduce heat and simmer for 45 minutes or until peas are tender.

Notes:

Serve hot with rice or chapati.
