Ingredients:  

Main Ingredients

  • 1 whole Pineapple peeled, cored, and chopped
  • 1 cup Carrots chopped
  • 1 cup Bell Peppers chopped
  • 1 cup Onions chopped
  • 2 cloves Garlic minced
  • 2 tbsp Olive Oil
  • 2 cups Vegetable Broth
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 tsp Paprika

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add garlic and onions, sauté until translucent.
  • 3. Add carrots and bell peppers, cook for 5 minutes.
  • 4. Stir in chopped pineapple, vegetable broth, salt, black pepper, and paprika.
  • 5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add more vegetables or spices to suit your taste.
