Ingredients:  

Main Ingredients

  • 2 whole Cornish hens
  • 4 cups Chicken broth
  • 2 cups Carrots, chopped
  • 2 cups Potatoes, diced
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Thyme
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Brown the Cornish hens on all sides.
  • 2. Remove the hens and set aside. In the same pot, sauté the onions and garlic until fragrant.
  • 3. Add the carrots and potatoes, cook for a few minutes.
  • 4. Pour in the chicken broth, add thyme, salt, and pepper. Bring to a boil.
  • 5. Return the hens to the pot. Reduce heat, cover, and simmer for about 1.5 hours or until the hens are tender.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like peas or corn for extra flavor.
