Instructions:
1. In a large pot, heat some oil over medium heat. Brown the Cornish hens on all sides.
2. Remove the hens and set aside. In the same pot, sauté the onions and garlic until fragrant.
3. Add the carrots and potatoes, cook for a few minutes.
4. Pour in the chicken broth, add thyme, salt, and pepper. Bring to a boil.
5. Return the hens to the pot. Reduce heat, cover, and simmer for about 1.5 hours or until the hens are tender.
6. Serve hot and enjoy!
Notes:
Feel free to add other vegetables like peas or corn for extra flavor.
