Ingredients:  

Main Ingredients

  • 2 cups Mushrooms, chopped
  • 1 cup Lentils, cooked
  • 1 cup Carrots, diced
  • 1 cup Potatoes, diced
  • 4 cups Vegetable broth
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat a large pot over medium heat.
  • 2. Add the chopped mushrooms and cook until they release their moisture and start to brown.
  • 3. Add the diced carrots and potatoes, and cook for another 5 minutes.
  • 4. Stir in the cooked lentils, vegetable broth, thyme, and rosemary.
  • 5. Bring to a boil, then reduce heat and simmer for 30 minutes, or until vegetables are tender.
  • 6. Season with salt and pepper to taste before serving.

Notes:

Feel free to add other vegetables or spices to suit your taste.
