Instructions:
Rinse lentils and rice under cold water.
In a large pot, heat olive oil over medium heat.
Add onions, garlic, carrots, and celery. Sauté until softened.
Stir in cumin and paprika.
Add lentils, rice, diced tomatoes, and vegetable broth.
Bring to a boil, then reduce heat and simmer for 45 minutes.
Season with salt and pepper to taste.

Feel free to add more spices or vegetables to your liking.
