Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp ground cinnamon
  • 1 can diced tomatoes (14.5 oz can)
  • 1 can chickpeas, drained and rinsed (15 oz can)
  • 2 cups vegetable broth
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic, cumin, coriander, paprika, and cinnamon. Cook for another minute.
  • Add the diced tomatoes, chickpeas, vegetable broth, salt, and black pepper. Stir to combine.
  • Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
  • Garnish with chopped fresh cilantro before serving.

Notes:

This stew is great served with crusty bread or over rice.
