Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic, cumin, coriander, paprika, and cinnamon. Cook for another minute.
Add the diced tomatoes, chickpeas, vegetable broth, salt, and black pepper. Stir to combine.
Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
Garnish with chopped fresh cilantro before serving.
Notes:
This stew is great served with crusty bread or over rice.
