Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent.
Add the minced garlic and cook for another minute.
Stir in the spinach and cook until wilted.
Add the tomato sauce, vegetable broth, salt, and black pepper. Bring to a boil.
Reduce heat and simmer for 30 minutes.
Serve hot with rice or bread.
