Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 500 g Spinach, fresh or frozen
  • 1 cup Tomato Sauce
  • 2 cups Vegetable Broth
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent.
  • Add the minced garlic and cook for another minute.
  • Stir in the spinach and cook until wilted.
  • Add the tomato sauce, vegetable broth, salt, and black pepper. Bring to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Serve hot with rice or bread.
