Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until softened.
3. Stir in the paprika, salt, and black pepper.
4. Add the soaked chickpeas, diced potatoes, and tomato sauce.
5. Pour in the water and bring to a boil.
6. Reduce the heat to low and simmer for about 60 minutes, or until the chickpeas and potatoes are tender.
7. Adjust seasoning if needed and serve hot.
Notes:
This stew is perfect for a cozy dinner. Serve with crusty bread.
