Ingredients:  

Main Ingredients

  • 1 cup chickpeas soaked overnight
  • 2 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 4 cups water
  • 2 tablespoons olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and garlic, and sauté until softened.
  • 3. Stir in the paprika, salt, and black pepper.
  • 4. Add the soaked chickpeas, diced potatoes, and tomato sauce.
  • 5. Pour in the water and bring to a boil.
  • 6. Reduce the heat to low and simmer for about 60 minutes, or until the chickpeas and potatoes are tender.
  • 7. Adjust seasoning if needed and serve hot.

Notes:

This stew is perfect for a cozy dinner. Serve with crusty bread.
