Ingredients:  

Main Ingredients

  • 2 tbsp vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 lb chicken thighs, cut into chunks
  • 1 cup peanut butter
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups spinach, chopped
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Heat the oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and grated ginger, and cook for another 2 minutes.
  • Add the chicken chunks and cook until browned on all sides, about 5-7 minutes.
  • Stir in the peanut butter, chicken broth, and diced tomatoes. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  • Add the chopped spinach, salt, and black pepper. Cook for another 5 minutes, until the spinach is wilted.
  • Serve hot with rice or your favorite side.

Notes:

This stew is even better the next day as the flavors meld together.
