chicken thighs, cut into chunks

peanut butter

chicken broth

diced tomatoes

spinach, chopped

Instructions:
Heat the oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and grated ginger, and cook for another 2 minutes.
Add the chicken chunks and cook until browned on all sides, about 5-7 minutes.
Stir in the peanut butter, chicken broth, and diced tomatoes. Bring to a boil, then reduce the heat and simmer for 20 minutes.
Add the chopped spinach, salt, and black pepper. Cook for another 5 minutes, until the spinach is wilted.
Serve hot with rice or your favorite side.
Notes:
This stew is even better the next day as the flavors meld together.
