Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and cook until browned on all sides.
3. Add chopped onion and minced garlic, cook until softened.
4. Stir in tomato paste, salt, and black pepper.
5. Pour in beef broth, bring to a boil, then reduce heat to low and simmer for 1 hour.
6. Add sliced carrots and diced potatoes, simmer for another hour or until vegetables are tender.
7. Adjust seasoning if needed and serve hot.
Notes:
Feel free to add other vegetables like peas or green beans.
