Instructions:
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion and minced garlic, and sauté until the onion is translucent.
Add the chopped spinach and cook until wilted.
Stir in the diced tomatoes and chicken broth. Bring to a simmer.
Season with salt and black pepper. Simmer for 20 minutes, stirring occasionally.
Serve hot with rice or your favorite side.
Notes:
This stew is versatile and can be made with other leafy greens if spinach is not available.
