Ingredients:  

Main Ingredients

  • 2 tbsp Vegetable Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 lb Spinach fresh, washed and chopped
  • 1 cup Tomatoes diced
  • 1 cup Chicken Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • Add the chopped spinach and cook until wilted.
  • Stir in the diced tomatoes and chicken broth. Bring to a simmer.
  • Season with salt and black pepper. Simmer for 20 minutes, stirring occasionally.
  • Serve hot with rice or your favorite side.

Notes:

This stew is versatile and can be made with other leafy greens if spinach is not available.
