Ingredients:  

Main Ingredients

  • 1 lb Beef stew meat cut into chunks
  • 1 lb Tomatillos husked and chopped
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 cup Beef broth
  • 2 Potatoes peeled and chopped
  • 1 Carrot chopped

Instructions: 

  • 1. In a large pot, brown the beef stew meat over medium heat.
  • 2. Add the chopped onion and minced garlic, and cook until softened.
  • 3. Stir in the cumin and salt.
  • 4. Add the chopped tomatillos and beef broth. Bring to a boil.
  • 5. Reduce heat, cover, and simmer for 1 hour.
  • 6. Add the potatoes and carrot. Continue to simmer for another hour, or until the vegetables are tender.
  • 7. Adjust seasoning with salt if needed. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Serve with warm tortillas or crusty bread.
