Ingredients:  

Main Ingredients

  • 2 lbs Conch meat cleaned and chopped
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 large Bell pepper chopped
  • 2 cups Coconut milk
  • 1 tsp Thyme dried
  • 1 tsp Allspice ground
  • 1 tsp Salt or to taste
  • 1 tsp Black pepper ground
  • 2 cups Water

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the chopped onion, garlic, and bell pepper. Sauté until softened.
  • 3. Add the conch meat and cook for about 5 minutes.
  • 4. Pour in the coconut milk and water. Stir to combine.
  • 5. Add thyme, allspice, salt, and black pepper. Bring to a boil.
  • 6. Reduce heat to low and let it simmer for about 45 minutes, or until the conch is tender.
  • 7. Adjust seasoning if needed. Serve hot.

Notes:

Conch can be tough, so make sure to simmer it long enough to get it tender.
