Pearl barley

Large onion, chopped

Garlic, minced

Beef broth

Carrots, sliced

Celery stalks, sliced

Instructions:
1. Heat a large pot over medium heat and add the lamb cubes. Cook until browned on all sides.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the sliced carrots and celery. Cook for another 5 minutes.
4. Add the pearl barley, beef broth, dried thyme, salt, and black pepper. Bring to a boil.
5. Reduce the heat to low, cover, and let simmer for 1.5 hours, or until the barley is tender and the lamb is cooked through.
6. Adjust seasoning as needed and serve hot.
Notes:
This stew is even better the next day. Store in the fridge and reheat gently.
