Ingredients:  

Main Ingredients

  • 500 g Lamb shoulder, cubed
  • 1 cup Pearl barley
  • 1 Large onion, chopped
  • 2 cloves Garlic, minced
  • 3 cups Beef broth
  • 2 Carrots, sliced
  • 2 Celery stalks, sliced
  • 1 tsp Dried thyme
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste

Instructions: 

  • 1. Heat a large pot over medium heat and add the lamb cubes. Cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the sliced carrots and celery. Cook for another 5 minutes.
  • 4. Add the pearl barley, beef broth, dried thyme, salt, and black pepper. Bring to a boil.
  • 5. Reduce the heat to low, cover, and let simmer for 1.5 hours, or until the barley is tender and the lamb is cooked through.
  • 6. Adjust seasoning as needed and serve hot.

Notes:

This stew is even better the next day. Store in the fridge and reheat gently.
