Ingredients:  

Main Ingredients

  • 2 lbs antelope meat, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 large carrots, sliced
  • 3 potatoes, cubed
  • 2 stalks celery, chopped
  • 1 can diced tomatoes
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add antelope meat and brown on all sides.
  • Add onion and garlic, cook until softened.
  • Pour in beef broth and bring to a boil.
  • Add carrots, potatoes, celery, and diced tomatoes.
  • Stir in thyme, rosemary, salt, and pepper.
  • Reduce heat, cover, and simmer for 2 hours or until meat is tender.
