Ingredients:  

Stew Ingredients

  • 2 tbsp Vegetable Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 lb Beef cut into chunks
  • 2 cups Tomato Sauce
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Paprika
  • 1 tsp Thyme

Rice and Beans Ingredients

  • 2 cups Rice
  • 1 cup Black-eyed Peas cooked
  • 4 cups Water

Instructions: 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until fragrant.
  • Add the beef chunks and cook until browned on all sides.
  • Stir in the tomato sauce, salt, black pepper, paprika, and thyme. Bring to a boil.
  • Reduce the heat and let it simmer for about 45 minutes, or until the beef is tender.
  • While the stew is simmering, cook the rice and beans. In a separate pot, bring the water to a boil.
  • Add the rice and cook according to the package instructions. Add the cooked black-eyed peas to the rice and mix well.
  • Serve the stew hot with the rice and beans on the side.

Feel free to adjust the spices to your taste.
