Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the chicken and cook until browned. Remove and set aside.
3. In the same pot, add the onion and garlic. Cook until softened.
4. Add the pumpkin and carrots. Cook for a few minutes.
5. Pour in the chicken broth and bring to a boil.
6. Add the chicken back to the pot. Season with salt, pepper, thyme, and paprika.
7. Reduce heat and simmer for about 30 minutes, until the pumpkin is tender.
8. Serve hot and enjoy!
Notes:
Feel free to add other vegetables like potatoes or bell peppers.
