Ingredients:  

Main Ingredients

  • 1 lb Chicken breast, cubed
  • 2 cups Pumpkin, cubed
  • 1 cup Carrots, sliced
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Thyme
  • 1 tsp Paprika

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the chicken and cook until browned. Remove and set aside.
  • 3. In the same pot, add the onion and garlic. Cook until softened.
  • 4. Add the pumpkin and carrots. Cook for a few minutes.
  • 5. Pour in the chicken broth and bring to a boil.
  • 6. Add the chicken back to the pot. Season with salt, pepper, thyme, and paprika.
  • 7. Reduce heat and simmer for about 30 minutes, until the pumpkin is tender.
  • 8. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like potatoes or bell peppers.
