Instructions:
1. Heat a Dutch oven over medium heat and brown the beef chuck cubes.
2. Add the chopped onion and minced garlic, cook until softened.
3. Stir in the tomato paste, salt, black pepper, and thyme.
4. Pour in the water, bring to a boil, then reduce to a simmer.
5. Add the carrots and potatoes, cover, and cook for about 2 hours or until the beef is tender.
6. Adjust seasoning if necessary and serve hot.
Notes:
For a richer flavor, you can add a splash of red wine or Worcestershire sauce.
