Ingredients:  

Main Ingredients

  • 2 cups dried black-eyed peas soaked overnight
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper bell pepper chopped
  • 2 tomatoes tomatoes chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 4 cups water

Instructions: 

  • Rinse and soak the black-eyed peas overnight.
  • In a large pot, heat the vegetable oil over medium heat.
  • Add the chopped onion, garlic, and bell pepper. Sauté until soft.
  • Add the chopped tomatoes and cook for another 5 minutes.
  • Drain the soaked black-eyed peas and add them to the pot.
  • Add the salt, black pepper, and paprika. Stir well.
  • Pour in the water and bring to a boil.
  • Reduce heat, cover, and simmer for 45 minutes or until the peas are tender.

Notes:

Serve hot with rice or bread.
