Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Ground Cinnamon
  • 1 can Diced Tomatoes
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • to taste Salt and Pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
  • Add chopped onion and minced garlic. Cook until onion is translucent.
  • Pour in beef broth, diced tomatoes, and spices. Stir well.
  • Add carrots and potatoes. Bring to a boil, then reduce heat and simmer for 1 hour or until beef is tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

For a richer flavor, let the stew sit overnight in the fridge and reheat before serving.
