Instructions:
Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
Add chopped onion and minced garlic. Cook until onion is translucent.
Pour in beef broth, diced tomatoes, and spices. Stir well.
Add carrots and potatoes. Bring to a boil, then reduce heat and simmer for 1 hour or until beef is tender.
Season with salt and pepper to taste. Serve hot.
Notes:
For a richer flavor, let the stew sit overnight in the fridge and reheat before serving.
