Ingredients:  

Main Ingredients

  • 1 cup mung beans rinsed
  • 6 cups water
  • 1 tbsp vegetable oil
  • 4 garlic cloves minced
  • 1 onion chopped
  • 2 tomatoes chopped
  • 1 cup spinach washed
  • 1 cup pork or shrimp optional, cooked
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Instructions: 

  • 1. In a pot, bring the water to a boil and add the mung beans. Cook until the beans are tender, about 30 minutes.
  • 2. In a separate pan, heat the vegetable oil over medium heat. Sauté the garlic, onion, and tomatoes until they are soft and fragrant.
  • 3. Add the sautéed mixture to the pot with the cooked mung beans. Stir well.
  • 4. Add the spinach and optional pork or shrimp. Season with salt and black pepper to taste. Simmer for another 10 minutes.
  • 5. Serve hot with rice.

Notes:

This stew is versatile. You can add more vegetables or adjust the seasoning to your liking.
