Instructions:
1. In a pot, bring the water to a boil and add the mung beans. Cook until the beans are tender, about 30 minutes.
2. In a separate pan, heat the vegetable oil over medium heat. Sauté the garlic, onion, and tomatoes until they are soft and fragrant.
3. Add the sautéed mixture to the pot with the cooked mung beans. Stir well.
4. Add the spinach and optional pork or shrimp. Season with salt and black pepper to taste. Simmer for another 10 minutes.
5. Serve hot with rice.
Notes:
This stew is versatile. You can add more vegetables or adjust the seasoning to your liking.
