Ingredients:  

Main Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 4 cups chopped kale
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and red pepper flakes, cook for another minute.
  • Stir in beans, tomatoes, and vegetable broth. Bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Add kale and cook until wilted, about 5 minutes. Season with salt and pepper.

Notes:

Feel free to add more vegetables or spices to suit your taste.
