Olive Oil
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chicken thighs and cook until browned on all sides. Remove and set aside.
3. In the same pot, add onions and garlic. Cook until softened.
4. Add carrots and potatoes. Cook for a few minutes.
5. Return chicken to the pot. Add chicken broth, salt, pepper, and paprika.
6. Bring to a boil, then reduce heat and simmer for 30 minutes, or until chicken is cooked through and vegetables are tender.
7. Serve hot.
Notes:
Feel free to add other vegetables like peas or green beans.
