boneless beef chuck, cut into 1-inch cubes

olive oil

large onion, chopped

garlic, minced

beef broth

carrots, sliced

potatoes, diced

celery, sliced

dried thyme

tsp
dried rosemary
to taste
salt and pepper
Instructions:
1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides.
2. Add chopped onion and minced garlic to the pot. Cook until onions are translucent.
3. Pour in beef broth, then add carrots, potatoes, celery, thyme, and rosemary. Bring to a boil.
4. Reduce heat to low, cover, and simmer for about 2 hours, or until beef is tender.
5. Season with salt and pepper to taste before serving.
Notes:
For a thicker stew, you can mix 2 tablespoons of flour with a bit of water and add it to the stew in the last 30 minutes of cooking.
