Ingredients:  

Main Ingredients

  • 2 lbs boneless beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, sliced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides.
  • 2. Add chopped onion and minced garlic to the pot. Cook until onions are translucent.
  • 3. Pour in beef broth, then add carrots, potatoes, celery, thyme, and rosemary. Bring to a boil.
  • 4. Reduce heat to low, cover, and simmer for about 2 hours, or until beef is tender.
  • 5. Season with salt and pepper to taste before serving.

Notes:

For a thicker stew, you can mix 2 tablespoons of flour with a bit of water and add it to the stew in the last 30 minutes of cooking.
