Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the cubed potatoes, tomato sauce, water, salt, black pepper, and cumin. Stir well.
Bring the mixture to a boil, then reduce the heat to low and simmer for 30-35 minutes, or until the potatoes are tender.
Adjust seasoning if needed and serve hot.
Notes:
This stew is even better the next day, once the flavors have melded together.
