Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 medium Potatoes peeled and cubed
  • 1 cup Tomato Sauce
  • 4 cups Water
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 tsp Cumin

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the cubed potatoes, tomato sauce, water, salt, black pepper, and cumin. Stir well.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 30-35 minutes, or until the potatoes are tender.
  • Adjust seasoning if needed and serve hot.

Notes:

This stew is even better the next day, once the flavors have melded together.
