Ingredients:  

Main Ingredients

  • 1 lb beef stew meat cut into chunks
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 2 cups low-sodium beef broth
  • 1 cup water
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  • Add onion and garlic, cook until softened.
  • Add carrots and celery, cook for a few minutes.
  • Pour in beef broth and water. Add thyme, rosemary, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
  • Remove bay leaf before serving.
