low-sodium beef broth

bay leaf
Salt and pepper
to taste
Instructions:
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Add onion and garlic, cook until softened.
Add carrots and celery, cook for a few minutes.
Pour in beef broth and water. Add thyme, rosemary, bay leaf, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
Remove bay leaf before serving.
