mixed beans, cooked

diced tomatoes

vegetable broth

paprika
to taste
salt and pepper

spinach, chopped
Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until soft.
Add mixed beans, diced tomatoes, and vegetable broth. Stir well.
Season with cumin, paprika, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 30 minutes.
Stir in chopped spinach and cook for another 5 minutes.
Serve hot and enjoy!
