Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mixed beans, cooked
  • 1 cup diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste salt and pepper
  • 1 cup spinach, chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté until soft.
  • Add mixed beans, diced tomatoes, and vegetable broth. Stir well.
  • Season with cumin, paprika, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Stir in chopped spinach and cook for another 5 minutes.
  • Serve hot and enjoy!

This stew can be stored in the fridge for up to 3 days.
