Ingredients:  

Main Ingredients

  • 2 lbs beef stew meat cut into cubes
  • 2 tbsp vegetable oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 2 carrots sliced
  • 2 potatoes diced
  • 1 can diced tomatoes 14.5 oz
  • 4 cups beef broth
  • 1 tsp thyme dried
  • 1 tsp allspice ground
  • 1 tsp salt or to taste
  • 1 tsp black pepper or to taste
  • 1 scotch bonnet pepper whole, optional

Instructions: 

  • 1. Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the bell pepper, carrots, and potatoes. Cook for a few minutes.
  • 4. Add the diced tomatoes, beef broth, thyme, allspice, salt, and black pepper. Bring to a boil.
  • 5. Reduce the heat to low, cover, and let simmer for about 2 hours, or until the beef is tender.
  • 6. If using, add the whole scotch bonnet pepper during the last 30 minutes of cooking for added heat.
  • 7. Remove the scotch bonnet pepper before serving. Adjust seasoning if needed. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat gently.
