vegetable oil

large onion

garlic

bell pepper
chopped

carrots
sliced

potatoes
diced

can
diced tomatoes

beef broth

tsp
thyme
dried

tsp
allspice
ground
1
tsp
salt
or to taste

black pepper
or to taste
1
scotch bonnet pepper
whole, optional
Instructions:
1. Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the bell pepper, carrots, and potatoes. Cook for a few minutes.
4. Add the diced tomatoes, beef broth, thyme, allspice, salt, and black pepper. Bring to a boil.
5. Reduce the heat to low, cover, and let simmer for about 2 hours, or until the beef is tender.
6. If using, add the whole scotch bonnet pepper during the last 30 minutes of cooking for added heat.
7. Remove the scotch bonnet pepper before serving. Adjust seasoning if needed. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat gently.
