Ingredients:  

Main Ingredients

  • 1 kg Lamb shoulder, cut into chunks
  • 2 tbsp Olive oil
  • 1 Large onion, chopped
  • 3 cloves Garlic, minced
  • 400 g Canned tomatoes
  • 2 cups Beef broth
  • 2 Carrots, sliced
  • 2 Potatoes, cubed
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add lamb and brown on all sides.
  • Add chopped onion and garlic, cook until softened.
  • Stir in canned tomatoes and beef broth. Bring to a boil.
  • Add carrots, potatoes, thyme, salt, and pepper. Reduce heat and simmer for 1.5 hours.
  • Check seasoning and adjust if necessary. Serve hot.

Notes:

This lamb stew is even better the next day. Store leftovers in the fridge.
