Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the beef stew meat and brown on all sides.
3. Add the chopped onion and minced garlic, cook until softened.
4. Pour in the beef broth and bring to a boil.
5. Add the carrots, potatoes, salt, pepper, and thyme. Reduce heat and simmer for about 2 hours.
6. Serve hot and enjoy!
