Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Brown the country-style ribs on all sides, then remove and set aside.
3. In the same pot, add the chopped onion and minced garlic. Cook until softened.
4. Add the beef broth, carrots, potatoes, salt, pepper, thyme, and paprika. Stir well.
5. Return the ribs to the pot. Bring to a boil, then reduce heat to low and simmer for about 2 hours, or until the meat is tender.
6. Serve hot and enjoy!
