Instructions:
Heat the oil in a large pot over medium heat.
Add the chicken pieces and cook until browned on all sides.
Add the chopped onion, garlic, tomato, and bell pepper. Cook until the vegetables are soft.
Stir in the chopped cilantro, chicken broth, cumin, salt, and black pepper.
Bring to a boil, then reduce the heat and simmer for about 30 minutes, or until the chicken is cooked through and tender.
Serve hot with rice or potatoes.
Notes:
This stew is even better the next day, as the flavors have more time to meld together.
