Ingredients:  

Main Ingredients

  • 1 kg Chicken cut into pieces
  • 2 tbsp Vegetable Oil
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Tomato chopped
  • 1 cup Bell Pepper chopped
  • 1 cup Cilantro chopped
  • 2 cups Chicken Broth
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • Heat the oil in a large pot over medium heat.
  • Add the chicken pieces and cook until browned on all sides.
  • Add the chopped onion, garlic, tomato, and bell pepper. Cook until the vegetables are soft.
  • Stir in the chopped cilantro, chicken broth, cumin, salt, and black pepper.
  • Bring to a boil, then reduce the heat and simmer for about 30 minutes, or until the chicken is cooked through and tender.
  • Serve hot with rice or potatoes.

Notes:

This stew is even better the next day, as the flavors have more time to meld together.
