Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 lb chicken thighs boneless, skinless
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1 cup chicken broth
  • 1 can diced tomatoes
  • 1 cup couscous
  • 1 cup water
  • 1 tbsp fresh cilantro chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken thighs and cook until browned on all sides.
  • Remove chicken and set aside.
  • In the same pot, add onion and garlic. Cook until softened.
  • Add cumin, cinnamon, ginger, and paprika. Stir for 1 minute.
  • Return chicken to the pot. Add chicken broth and diced tomatoes. Bring to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Meanwhile, prepare couscous according to package instructions using water.
  • Serve stew over couscous and garnish with fresh cilantro.

Notes:

Feel free to add vegetables like carrots or bell peppers for extra flavor and nutrition.
