couscous

Instructions:
Heat olive oil in a large pot over medium heat.
Add chicken thighs and cook until browned on all sides.
Remove chicken and set aside.
In the same pot, add onion and garlic. Cook until softened.
Add cumin, cinnamon, ginger, and paprika. Stir for 1 minute.
Return chicken to the pot. Add chicken broth and diced tomatoes. Bring to a boil.
Reduce heat and simmer for 30 minutes.
Meanwhile, prepare couscous according to package instructions using water.
Serve stew over couscous and garnish with fresh cilantro.
Notes:
Feel free to add vegetables like carrots or bell peppers for extra flavor and nutrition.
