Ingredients:  

Main Ingredients

  • 500 g mixed fish fillets cut into chunks
  • 2 onions finely chopped
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 400 g canned tomatoes chopped
  • 1 cup white wine
  • 2 cups fish stock
  • 2 tbsp parsley chopped
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onions and garlic, and sauté until softened.
  • Add the chopped tomatoes and cook for another 5 minutes.
  • Pour in the white wine and let it simmer for a few minutes.
  • Add the fish stock, salt, and pepper. Bring to a boil.
  • Add the fish chunks and reduce the heat to low. Let it simmer for about 20-25 minutes.
  • Sprinkle with chopped parsley before serving.

Notes:

Serve with crusty bread or polenta.
