Ingredients:  

Main Ingredients

  • 2 cups Red Kidney Beans soaked overnight
  • 1 can Coconut Milk
  • 2 cloves Garlic minced
  • 1 whole Scotch Bonnet Pepper optional
  • 1 teaspoon Thyme dried
  • 1 teaspoon Salt to taste
  • 1 cup Rice cooked

Instructions: 

  • 1. Drain and rinse the soaked red kidney beans.
  • 2. In a large pot, add the beans and enough water to cover them. Bring to a boil and cook for about 45 minutes or until tender.
  • 3. Add the coconut milk, garlic, thyme, and Scotch bonnet pepper to the pot. Stir well.
  • 4. Reduce the heat and let it simmer for another 30 minutes, stirring occasionally.
  • 5. Season with salt to taste.
  • 6. Serve hot with cooked rice.

Notes:

For a richer flavor, you can add pimento seeds and scallions to the stew.
