Instructions:
1. Drain and rinse the soaked red kidney beans.
2. In a large pot, add the beans and enough water to cover them. Bring to a boil and cook for about 45 minutes or until tender.
3. Add the coconut milk, garlic, thyme, and Scotch bonnet pepper to the pot. Stir well.
4. Reduce the heat and let it simmer for another 30 minutes, stirring occasionally.
5. Season with salt to taste.
6. Serve hot with cooked rice.
Notes:
For a richer flavor, you can add pimento seeds and scallions to the stew.
