Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
3. Add the soaked red beans, vegetable broth, thyme, salt, and black pepper. Stir to combine.
4. Bring to a boil, then reduce heat to low and simmer for 45 minutes, or until beans are tender.
5. Adjust seasoning if needed. Serve hot.
Notes:
For a thicker stew, mash some of the beans with a spoon before serving.
