Ingredients:  

Main Ingredients

  • 2 cups Red Beans soaked overnight
  • 1 tbsp Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Carrot chopped
  • 1 Celery Stalk chopped
  • 4 cups Vegetable Broth
  • 1 tsp Thyme dried
  • 1 tsp Salt or to taste
  • 1/2 tsp Black Pepper ground

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
  • 3. Add the soaked red beans, vegetable broth, thyme, salt, and black pepper. Stir to combine.
  • 4. Bring to a boil, then reduce heat to low and simmer for 45 minutes, or until beans are tender.
  • 5. Adjust seasoning if needed. Serve hot.

Notes:

For a thicker stew, mash some of the beans with a spoon before serving.
