Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef stew meat and cook until browned on all sides.
3. Add the chopped onions and minced garlic, and cook until softened.
4. Pour in the beef broth and diced tomatoes, and bring to a boil.
5. Add the sliced carrots, salt, and black pepper. Reduce heat and simmer for 30 minutes.
6. Serve hot and enjoy!

This stew is perfect for a cold day. Feel free to add other vegetables like potatoes or peas.
