Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic, sauté until fragrant.
3. Add pork chunks and brown on all sides.
4. Stir in jerk seasoning, thyme, salt, and black pepper.
5. Pour in chicken broth and coconut milk, bring to a boil.
6. Reduce heat to low, cover, and simmer for 1.5 hours or until pork is tender.
7. Serve hot with rice or bread.

Adjust the jerk seasoning to your spice preference.
