Salt and Pepper
Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add diced sweet potatoes, black beans, diced tomatoes, vegetable broth, ground cumin, and chipotle chili powder. Stir to combine.
Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
Season with salt and pepper to taste. Serve hot.
Notes:
For extra flavor, add a squeeze of lime juice and some chopped cilantro before serving.
