Ingredients:  

Main Ingredients

  • 2 medium Sweet Potatoes peeled and diced
  • 1 can Black Beans drained and rinsed
  • 1 can Diced Tomatoes
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive Oil
  • 2 cups Vegetable Broth
  • 1 tsp Ground Cumin
  • 1 tsp Chipotle Chili Powder
  • to taste Salt and Pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Add diced sweet potatoes, black beans, diced tomatoes, vegetable broth, ground cumin, and chipotle chili powder. Stir to combine.
  • Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

For extra flavor, add a squeeze of lime juice and some chopped cilantro before serving.
