Ingredients:  

Main Ingredients

  • 2 tablespoons butter
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 cups fish stock
  • 1 cup clam juice
  • 1 cup heavy cream
  • 1 pound cod cut into chunks
  • 0.5 pound shrimp peeled and deveined
  • 0.5 pound scallops
  • 0.5 pound clams scrubbed
  • 2 large potatoes peeled and diced
  • 2 large carrots peeled and sliced
  • to taste salt and pepper
  • to garnish fresh parsley chopped

Instructions: 

  • 1. Melt the butter in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  • 2. Pour in the fish stock and clam juice, and bring to a simmer.
  • 3. Add the potatoes and carrots, and cook until tender, about 10 minutes.
  • 4. Stir in the heavy cream, cod, shrimp, scallops, and clams. Simmer until the seafood is cooked through, about 10 minutes.
  • 5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes:

This stew is best served with crusty bread to soak up the delicious broth.
