Instructions:
1. Melt the butter in a large pot over medium heat. Add the onion and garlic, and cook until softened.
2. Pour in the fish stock and clam juice, and bring to a simmer.
3. Add the potatoes and carrots, and cook until tender, about 10 minutes.
4. Stir in the heavy cream, cod, shrimp, scallops, and clams. Simmer until the seafood is cooked through, about 10 minutes.
5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes:
This stew is best served with crusty bread to soak up the delicious broth.
