Ingredients:  

Main Ingredients

  • 1.5 lbs chicken thighs, boneless and skinless
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp harissa paste
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chicken broth
  • 1 can chickpeas, drained and rinsed 15 oz
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • to taste Salt and pepper
  • to garnish Fresh cilantro, chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add the chicken thighs and cook until browned on all sides. Remove and set aside.
  • In the same pot, add the chopped onion and garlic. Sauté until softened.
  • Stir in the harissa paste, cumin, and coriander. Cook for another minute.
  • Add the diced tomatoes, chicken broth, and chickpeas. Bring to a simmer.
  • Return the chicken to the pot. Cover and cook for 30-35 minutes, until the chicken is cooked through.
  • Season with salt and pepper to taste. Garnish with fresh cilantro before serving.

Notes:

This stew is perfect for a cozy dinner. Serve with crusty bread or over rice.
