harissa paste

chicken broth

chickpeas, drained and rinsed

Salt and pepper
to garnish
Fresh cilantro, chopped
Instructions:
Heat olive oil in a large pot over medium heat. Add the chicken thighs and cook until browned on all sides. Remove and set aside.
In the same pot, add the chopped onion and garlic. Sauté until softened.
Stir in the harissa paste, cumin, and coriander. Cook for another minute.
Add the diced tomatoes, chicken broth, and chickpeas. Bring to a simmer.
Return the chicken to the pot. Cover and cook for 30-35 minutes, until the chicken is cooked through.
Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
Notes:
This stew is perfect for a cozy dinner. Serve with crusty bread or over rice.
